Foodservice (Food and Beverage)

While Parker & Associates' consulting crosses many industry segments, the company has extensive experience in foodservice because of the work history of its principal. Pat Parker was part of the founding management group of McDonald's in Canada where he spent 17 years as Vice President Operations and then Vice President Marketing & Corporate Services. He traveled widely with McDonald's internationally and later sat on the Canadian Board. The originating company for McDonald's in Canada was the master franchisee and also founder of Keg Restaurants (now in Canada's top 20).

Pat was also Vice President/General Manager of White Spot, a multi - concept foodservice company in family/casual, fine dining, commissary, catering, and operator of 65 KFC's. Later with Mohawk Oil, Pat, as Vice President of Marketing Services, operated some 300 convenience stores under the Mohawk STOP & SHOP brand.

Parker & Associates has consulted in all facets of foodservice from fine dining to kiosks. Some of the firm's clients include the biggest and best in their segments. Consequently young, growing companies look to this depth of experience and overall knowledge of the industry to help them grow or re-brand their business.

Increasingly, Parker & Associates is approached by U.S. and other international franchisors to assist them with Canadian expansion. We act as Canadian broker for Carl's Jr. seeking a master franchisee(s) and we have a history of work with Dunkin Brands (Baskin Robbins, Dunkin Donuts, Togo's). Recent discussions are taking place with the likes of Applebees, and Sbarros and several other industry leaders who do not yet want their intentions made public.

Finally, Parker & Associates is regularly involved in foodservice and retail audits where changing dynamics require fresh creative thinking to meet customer demands. It may be a new university or a significant entertainment venue or large institutional operations that provide in-house foodservice operations for its employees.

Some recent projects include:

  • acting on behalf of investor group to acquire master/area rights from large foodservice franchisor
  • consulting to Canadian supplier to successfully obtain food production business for STARBUCKS operations
  • consulting to property management firm whose property has on-site foodservice that needs to change and to have catering contracts reassessed.
